Pulled Chicken Tacos
I think we could easily eat Mexican food every day of the week, but sometimes it’s nice to throw in a new variation into the mix. Instead of the usual crunchy shell beef tacos, I fixed pulled chicken tacos and my family couldn’t keep their hands off! It’s the middle of summer and if you’ve planted Zucchini in your garden, I’m sure you have all the zucchini you can harvest. You have more than enough. Gluten Free Eggplant Parmesan
Every year for his birthday Dan requests that I make Eggplant Parmesan, but now that I have am no longer eating gluten, I had to find a good substitute for the bread crumbs that I used to coat the eggplant. Almond meal (which is more course than almond flour) worked like a charm and with the added herbs and cheese makes for a delicious alternative that is just as good or better than bread crumbs. Superbowl Chili
Every time we host a super bowl party at our house, I make this chili. It works great in a crock pot or you can double the recipe and make it in a stock pot if you have a large crowd. We always set out toppings so each guest can dress it up to their liking. Topping ideas: Sour Cream Grated Cheddar Cheese Chives Bacon Jalepenos It’s always a crowd pleaser and makes wonderful leftovers during the warm winter months. Of course chili is great paired with corn bread, but these homemade cheesy crackers are pretty amazing too!
