Cottage Cheese Pancakes
This is a recipe my Grandma used to make whenever we came to visit them in Tacoma, WA. Imagine waking up to the smell of BACON, traveling from the kitchen, up the stairs and into the room where we slept. As kids, we knew that where there is bacon, there is also pancakes! My Grandma actually called them hot cakes which I thought was kind of weird when I was younger, but whatever you want to call them, they were tasty and we gobbled them up.
One summer, when I was in Jr. High, my brother and I spent a whole week with my Grandparents and I had the most fun learning all kinds of nifty domestic tricks. I started to write them all down in a notebook because I knew one day they would come in handy. I had the novel idea back then to ask my Grandma for some of her recipes and this recipe was the first on my list. Every time I make her “hot cakes,” it brings back fond memories of childhood visits to see my Grandparents.
- 1 cup cottage cheese
- 6 large eggs
- pinch of salt
- 2/3 cup flour
- 1 tbsp oil
- Combine all ingredients in a blender and blend until everything is combined.
- Pour batter onto a greased griddle (I use coconut oil).
- Flip once the top of the pancake begins to dry a bit.
- Our kids love these so much that I have to double the recipe! Enjoy!
