Try These Cheezies for the Perfect Keto Cracker Replacement
I am excited to share a new twist on an old family favorite! Because the only ingredient is cheese, these really are the perfect keto cracker.
As kids we would get pretty excited if some of the excess cheese oozed out and got extra crispy along the edges of our omelets. We soon figured out that we could make just the cheesy part by frying up Tillamook Cheese in a frying pan. Because we were clever children we named these crunchy cheesy bites…wait for it…Cheezies! All of my siblings agree that we definitely invented the cheezy. Now that all of us are eating keto, we’ve noticed the popularity of “fried cheese crackers” among the keto community and we just have to laugh. Um, yeah, we have been making those for over 35 years!
New Variations
Recently I discovered you can make large cheezies using deluxe American cheese in the microwave. These cheezies make awesome crunchy, crackers you can use for dipping in guacamole or salsa. Where these cheezies really shine is as an open face “sandwich.” Top a whole cheezy with chicken salad or spread cream cheese and top with deli meat.
You can make smaller cheezies by dividing the slice into 4 quarters before microwaving. Add pepperoni to each quarter for a pizza flavored snack. I love to use plain cheezies with Parmesan artichoke dip or smoked salmon dip. Cheezies make great portable snacks as long as you protect them from getting smashed. - Deli Deluxe American Cheese Slices
- Parchment Paper
- Tear off a piece of parchment paper an inch or two larger than the size of the cheese slice.
- Place one slice of Deli Deluxe American Cheese on the parchment paper.
- Place in the microwave for 1 minute. The cheese will expand and air bubbles will form.
- Let cool for a few seconds.
- Once cool, the puffed up cheese becomes crisp, like a cracker.
- Enjoy plain, with your favorite dip or top with sliced meats.
- Also works well with other cheese like shredded cheddar or Parmesan.
Notes
I don’t recommend using the cheap American cheese slices that are individually wrapped. You will be much happier using the Deli Deluxe American cheese slices. Also make sure you are using parchment paper and not waxed paper.
