Try These Cheezies for the Perfect Keto Cracker Replacement
I am excited to share a new twist on an old family favorite! Because the only ingredient is cheese, these really are the perfect keto cracker. As kids we would get pretty excited if some of the excess cheese oozed out and got extra crispy along the edges of our omelets. We soon figured out that we could make just the cheesy part by frying up Tillamook Cheese in a frying pan. Because we were clever children we named these crunchy cheesy bites…wait for it…Cheezies! All of my siblings agree that we definitely invented the cheezy. Now that all of us are eating keto, we’ve noticed the popularity of “fried…

Spinach Artichoke Tart
I found this amazing recipe when I was going through my hard core Paleo phase a few years back. Even now, I still eat pretty clean and would probably consider my diet somewhere between Paleo and Keto, however because this recipe does contain cheese, it would fall more in-line with Keto foods than strict Paleo. Regardless, it is a delicious way to satisfy your quiche cravings. Not that I really ever have “quiche cravings,” but this dish just feels really indulgent, like a comfort food, when in reality, you are benefiting from a pretty generous portion of spinach and artichokes…and well, cheese! The crust is made from almond flour, so…

From Scratch Marinara Sauce
Tomatoes are being harvested faster than I can use them up. My refrigerator was stocked with my homemade salsa and I needed another way to make use of the abundance of tomatoes coming my way, so I went looking for an easy marinara sauce. While I pride myself on cooking from scratch, the one thing I never really tried to make from scratch was pasta sauce. The stuff you buy at the store tastes fine enough and if you read your labels, you can find pre-made organic sauce without sugar or or other unwanted ingredients. It worked for me, but last year I tried making my first ever attempt at…

My favorite Grain-Free Banana Bread
This recipe came about when I needed to use up some ripe bananas and searched online for Paleo banana bread recipes. I finally found a recipe that used only 2 eggs (which was all I had on hand) and so I began dumping ingredients into my mixer…then I realized that instead of the required 3 cups of almond flour, I was down to ONE! So I improvised by adding other alternate flours and balancing out wet ingredients and the results were AMAZING!!! Note: This banana bread will taste even more fabulous when you use homemade vanilla using the recipe I shared here.

Gluten Free Eggplant Parmesan
Every year for his birthday Dan requests that I make Eggplant Parmesan, but now that I have am no longer eating gluten, I had to find a good substitute for the bread crumbs that I used to coat the eggplant. Almond meal (which is more course than almond flour) worked like a charm and with the added herbs and cheese makes for a delicious alternative that is just as good or better than bread crumbs. Last night I made this dish to celebrate some exciting news in our household. Dan was invited to present at the MHCC board meeting on behalf of the Advocate, the college newspaper he advises for.…
